Green dragon vegetable from Cameron Highlands,
Malaysia is becoming more and more popular in Chinese restaurants. It is often stir
fried with thinly sliced garlic but I like to
add bacon or Chinese roast pork to give it more flavour.
Green dragon vegetable (青龙菜) or
royale chives belongs to the allium family of vegetables and herbs, which includes
garlic, scallions, onions and leeks. It is yellow chives that are grown with
limited sunlight to achieve the green colour. It is more tender and less fibrous and does not have the strong pungent
flavour of garlic. They are low in calories but high in beneficial
nutrients like vitamins, minerals and antioxidants. The nutrients in chives may offer many health benefits,
including prevention of cancer and
mood enhancement.
Ingredients
2 bundles green dragon vegetables
2 strips bacon rashers
Soak in rice water for 10 min
Rinse properly because there is a lot of sand
in the grooves
Cut the vegetable into 1 inch pieces
Cut the bacon into small pieces
Heat 1 tbsp oil and fry the bacon until
fragrant
Add 1 tsp chopped garlic
Put in the vegetable
Season with salt and pepper
Mix thoroughly then dish up and serve
