What
do you do if you have a lot of left over rice? The answer is very simple. Fry
it!!! It is easier to fry the rice when it is cold so if you plan to fry rice
and don’t have leftover rice than you should cook the rice in the morning to
fry in the evening. Fried rice is very easy to cook and it is up to you what
ingredients to add. There are actually 2 methods to fry rice and I will show
you how.
First of
all get the rice ready
Put the cooked
rice into a basin
Sprinkle a
little water on the rice and break it up so that there are no big lumps
Most people put the eggs directly onto the rice
but I like to cook it separately because it adds colour to the dish and small
children like to taste the eggs
Break 2 eggs into a bowl.
Add salt and pepper and beat
up the mixture
Pour the egg mixture into
the pan and let it set a little
Turn the
egg over and break it into small pieces
Remove and
set aside
The first method – Fried rice with chicken and preserved radish
This is the
traditional method that most people use where you fry the ingredients first
then add the rice.
Ingredients
1 chicken breast
Preserved radish
White cabbage
Chopped
garlic
Cooking
oil
Salt and
pepper
Cut the chicken into cubes and slice the cabbage
Heat the cooking
oil and fry the garlic until fragrant
Add the chicken and fry
until colour changes
Add the cabbage and mix
thoroughly
Add the rice
Add the eggs and mix thoroughly
Dish up and serve
The
second method – Fried rice with Chinese
sausage
A friend
who used to work in a Hong Kong Chinese restaurant taught me this method. The rice
is more fragrant fried this way.
Ingredients
Cooked
rice
2 Chinese
sausages
Frozen vegetables
Chopped
garlic
Cooking
oil
Sesame oil
Salt and pepper
Heat the cooking
oil with a little sesame oil
Add the
garlic and fry till fragrant
Add the
rice and a little soy sauce
Stir
until there are no lumps
Remove
and put aside
Put a
little more oil in the wok.
Add the
sausage and vegetables
Season
with salt and pepper
When the
vegetables are cooked put the rice and egg back into the wok
Dish up
and serve
