This is a dish which I have
not seen in any restaurants or mixed rice stalls that I have been to. I learnt
this from my grandma but she uses white vinegar to make the sauce. I use plum
sauce instead of vinegar because it is gentler for the children’s stomach and
those who have gastric problems.
Pork
skin (干猪肉皮) has a cell structure similar to human skin and based on the idea that
‘like heals like’ it is good for skin ailments. It is rich in minerals and
vitamins B1, B2 and collagen
protein which helps make the skin smoother and more supple help reduce the
appearance of wrinkles. It also promotes growth of hair and nails. According
to Traditional Chinese medicine pig skin can nourish yin (cold) energy and
reduce inner heat. It is used in many TCM prescriptions to treat many ailments
such as sore throat, ringing in the ears and excessive bleeding.
Ingredients
Dried pork skins
1 small can pineapple
rings (I use canned pineapples because I am not good at choosing sweet fresh
pineapples)
Soak the pork skin until
soft and then cut into bite size pieces
Open the can of pineapple and
cut the rings into 4 pieces
Prepare the sauce
4 tbsp tomato ketchup
1 tbsp plum sauce
The liquid from the can of
pineapple
1 tsp sugar
Mix the sauce thoroughly
Heat a little oil and fry
some chopped garlic until fragrant
Add the sauce and stir
until it starts to thicken
Put in the pork and stir
making sure it is well coated with the sauce
Put in the pineapple
slices and mix well
Season with a little salt
and pepper
Add a little water if it looks
too dry
When it is ready, dish up
into a serving platter
