This typical hokkien dish is an all-time favourite among all my family members. It is fantastic eaten with chicken curry or sambal belachan or rice congee.
Ingredients
2 strips of pork belly
2 white or brown garlic bulbs
Small piece of ginger
Cut the pork into bite size pieces
Wash the meat with a little salt and rinse until the water is clear
Drain off the water
Marinade
1 Star anise
2 Cloves
Small piece cinnamon stick
2 tbsp dark soy sauce
1 tbsp light soy sauce
1 tbsp oyster sauce
¼ teaspoon sugar
Salt and pepper
Mix the marinate ingredients in a bowl
Put in the meat and mix thoroughly.
Leave for about an hour
Heat some vegetable and sesame oil in a wok
Put in the ginger and fry until fragrant
Add the meat and stir thoroughly in the oil
Add the garlic and enough water to cover the meat
Cover and simmer until the meat is cooked
If desired add hard boiled eggs or tau kwa when the meat is cooked.
