Misua (mee sua) soup

Misua soup can be eaten as a meal on its' own or as accompaniment to the main meal. When children are ill with fever, they should not eat rice which can cause the fever to worsen. Misua soup is the ideal replacement as the soup will help provide extra liquid to reduce the fever.

Misua also spelled mee sua is a very thin variety of salted noodles made from wheat flour. They originated in Fujian, China. Misua signifies long life in Chinese culture therefore it is a traditional birthday food. It is normally cooked in soup but the thicker variety is used for frying. Most brands of Misua need to be rinsed with hot water to reduce the saltiness and starch.

I like this brand because there is no need to rinse it. Just put the required amount into the stock.

Ingredients

1 bundle of mee sua
Minced or sliced pork or chicken
1 ½ bowls of stock or 1 chicken stock cube
Salt and pepper to taste

Marinate
Sesame oil
Corn flour
Light soy sauce

Season the pork with the marinate

Bring the stock to the boil
Drop in the pork slices or minced meat balls

Add the mee sua to the soup.

Season with salt and pepper
Add a spoonful of brandy if eating during confinement

Alternatively, you can use slices of fried eggs. For birthdays use 2 hard-boiled eggs.
