This is another one of my ‘emergency’
side dishes. It is easy and fast to prepare and a favourite with the children.
Ingredients
Minced pork
2 eggs
Crack the eggs into a bowl
Add salt and pepper
Put the pork into the egg and mix well
Heat 1 tbsp oil in a fry
pan
Pour in the egg mixture
and tip the pan around to spread the egg evenly
Cook on low heat so that
the egg does not get burnt and the pork can cook properly
When the bottom is brown, turn
it over to brown the other side
Break it up into bite size
pieces
Dish up and serve
