Stir fried meehoon is a delicious one meal dish that is
easy and fast to cook. It can be served for breakfast or lunch and even for family
gatherings or parties at home or outside. You can use any combination of vegetables
and meat or sea food or even make it vegetarian style and it will still be
delicious. Today the girls are at home and they want lunch so the quickest way
to feed them is to fry meehoon.
Meehoon and kueh teow are rice noodles made from white rice flour,
water and other ingredients but made in different shapes. Meehoon also called rice
vermicelli is the thin
form of rice noodles. It can be fried, cook in soups or even in salads. It is a great gluten-free alternative for people who are
sensitive to gluten or have celiac disease. It has phosphorus which helps
maintain strong bones, filter waste products in the kidneys and also
maintain energy levels.
Ingredients
This is what I found in
the fridge and freezer
1 piece of chicken breast
Some pork tendon
Chinese cabbage
Lettuce
1 egg
I like to use this meehoon because it is packed
individually which makes it very easy to use so no meehoon strips falling all
over the kitchen. I allocate 1 piece of meehoon per person if they are fairly
big eaters and 2 pieces for 3 people if they are small eaters.
2 pieces of the meehoon
Soak the meehoon to soften
it before you start
to prepare the other ingredients.
Fry the garlic and a
little salt until fragrant then add the pork tendon
Add the sliced chicken and stir until it changes colour
Add 2 tbsp dark soy sauce,
1 tbsp oyster sauce and a dash of pepper
Add the Chinese cabbage and
stir gently to
mix everything together.
When the cabbage is almost
soft add enough hot water to cover the vegetables completely
Put in the meehoon and stir to make sure everything is well
mixed
Keep on
stirring until the rice vermicelli has absorbed almost all the liquid.
Add the lettuce and mix
thoroughly
Beat up the egg and fry
like a thin omelette
Dish
up and cut into thin strips
Dish up the meehoon and
garnish with the egg strips and any other garnishing that you like
