Ginseng soup

I cook this soup once a month for the whole family and more frequently during very hot weather. The soup is suitable for children above 2 years old.



Ginseng roots have no nutritional value but cooling properties therefore is useful for reducing internal body heat. It can either be infused with boiling water to drink or cooked as soup.



Ingredients


1 chicken carcass
Ginseng roots





Put enough boiling water into the slow cooker and add the ginseng roots




Blanch the chicken to remove the scum





Transfer the clean chicken to the slow cooker




Add some keichi, red dates and yuk chuk. Cover and cook for about 4 hours



Sometimes the children find the above version a bit bitter so I add sweet corn and use pork bones instead
