Stir fried chicken breasts with fermented black beans

I always love the taste of fermented black beans no matter how they are cooked. Previously I had posted fish with fermented black beans. Today I am using chicken breasts. You can also use cut chicken whole legs for this dish if you don’t like chicken breasts.

 Fermented black beans (豆豉) are also called Chinese black beans, dried black beans, salted black beans and tausi (Hokkien name). It is made by fermenting and salting black soybeans which makes the beans soft and semi-dry. During the process of fermentation, microorganisms such as bacteria, yeast or fungi convert sugars and starch into lactic acid which acts as a natural preservative to enhance the activity of the natural, beneficial bacteria known as probiotics. Fermented foods are rich in probiotic bacteria so eating fermented foods can improve the health of the digestive system and immune system. Fermented black beans have a very salty, pungent flavour and they are very fresh if they have fewer wrinkles. 
Ingredients 

1 piece skinless chicken breasts
½ a green bell pepper
½ a red bell pepper
1 small Bombay onion
2 tbsp fermented black beans


Slice the chicken into bite size pieces
Rinse the fermented black beans and add to the chicken
Add 1 tsp each of shaoxing wine and sesame oil
Season with pepper and light soya sauce




Cube the onions and peppers





Heat up some oil until very hot
Add the chicken and mix thoroughly in the oil
Add a little water



Stir until the chicken changes colour





Add all the cut vegetables and mix well





Add a bit more water if it looks too dry





Dish up and serve immediately
