I always love the taste of fermented black beans no matter
how they are cooked. Previously I had posted fish with fermented black beans. Today I am
using chicken breasts. You can also use cut chicken whole legs for this dish if
you don’t like chicken breasts.
Ingredients
1 piece skinless chicken breasts
½ a green bell pepper
½ a red bell pepper
1 small Bombay onion
2 tbsp fermented black beans
Slice the chicken into bite size pieces
Rinse the fermented black beans and add to the
chicken
Add 1 tsp each of shaoxing wine and sesame oil
Season with pepper and light soya
sauce
Cube the onions and peppers
Heat up some oil until very hot
Add the chicken and mix thoroughly in the oil
Add a little water
Stir until the chicken changes colour
Add all the cut vegetables and mix well
Add a bit more water if it looks too dry
Dish up and serve immediately
