Old cucumber and roast pork bone soup (老黄瓜汤)

I love using roasted pork bones when doing slow cooked soups because they give a really fragrant aroma and taste to the soup. Old cucumber is cooling and the roast pork is warming so when you combine them the soup is neutral therefore suitable for everyone.

Ingredients


1 old cucumber
6 pieces roasted pork bones




Rinse the pork bones so that it won’t be too salty
Put in 1 chicken stock cube
Put the bones with boiling water into the slow cooker and cook on high for 1 hour



Scrub the skin clean and cut into chunks





Remove the seeds





Add the cucumber, yuk chuk, dates, kei chi and cook on low for another 4 - 5 hours
