Stir fried beans and carrots

I thought I’ll try using Kewpie roasted sesame dressing for a change and it turned out absolutely delicious. This dish is now one of the children’s favourite way of eating carrots and beans.

Carrots (红萝卜) are an excellent source of Vitamin A, which is necessary for healthy eyesight, skin, growth, and also aids our bodies in resisting infection. Carrots have higher natural sugar content than all other vegetables with the exception of beets. This is why they make a wonderful snack when eaten raw and make a tasty addition to a variety of cooked dishes. Look for well-shaped carrots that are deep orange in color. More beta carotene is present in carrots that have a darker orange color. Avoid carrots that are crackled, shriveled, soft, or wilted. 
Ingredients 


1 small carrot or ½ of a large carrot
A bunch of flat runner beans



Kewpie Roasted Sesame Dressing is made with soy bean oil, egg yolks, roasted sesame and mustard. This nutty, creamy dressing is not only good in pastas and salads but also in stir fries.




Finely slice the carrot and runner beans




Fry the chopped garlic until slightly brown





Add the cut vegetables





Mix thoroughly and add a little water to help soften the vegetables





Cover and cook until vegetables are soft and tender
Remember to stir occasionally and add a bit more water if needed




Add 2 tbsp kewpie roasted sesame dressing and mix well





Dish up and garnish with fried shallots
