Potato with minced pork

This is another favourite with children. It is very easy and fast to prepare.
 Potato is a root vegetable which belongs to the same family as tomatoes, eggplants, peppers, and tomatillos. Potato is a very good source of vitamin B6, potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fibre, and pantothenic acid. Potatoes also contain a variety of phytonutrients that have antioxidant activity. There are about 100 varieties of edible potatoes. They range in size, shape, color, starch content and flavour. You should choose your potato according to how you want to cook it. Most of the nutrients are found in or just under the skin, so it is best to consume both the flesh and the skin. Potatoes should be cleaned and cut just before cooking in order to avoid the discoloration that occurs with exposure to air.
When buying potatoes, look for firm, blemish-free potatoes. Avoid those that are cracked, have sprouts, wrinkles or green tinges. It is better to buy them individually from a bulk display rather than ready packaged. This way you can check for signs of decay or damage. 

Ingredients 


2 large potatoes
1 medium sized onion
Minced pork



Slice the potatoes and onion





Fry some chopped garlic until fragrant





Put in the minced pork





When the pork changes colour add ½ tbsp dark soy sauce, 1 tbsp oyster sauce




Add the onion and mix





Add the sliced potatoes





Mix thoroughly and add a little water





Cover and simmer over low fire until the potatoes are cooked.
Remember to stir occasionally and add more water if necessary to prevent the sauce drying up
