Long bean omelette

Whenever I run out of ideas on what to cook I always think of omelettes. It is easy to prepare and you can use anything that you have in the fridge or freezer. Today I am going to use long beans.

 Chewy and flavourful long beans, also known as Chinese snake beans, are closely related to black-eyed peas.
Fresh beans contain a good amount of vitamin C, vitamin A, minerals such as iron, copper, manganese, calcium, magnesium. It is also a good source of folates. Consuming an adequate amount of folate around conception and during pregnancy may help prevent neural-tube defects in the new-born.

Ingredients

4 strings of long beans
3 eggs




Finely cut the long beans





Put a little oil in the wok.
Add some chopped garlic and fry until fragrant
Add the long beans and stir until cooked



When the beans are cooked, add some fried shallots





Pour in the beaten eggs





Tip the pan around until the eggs completely covers the beans.
When the bottom is brown, turn it over to brown the other side
Break it up into bite size pieces



Dish up and serve
