Baked banana and bacon roll


This is a very popular dish for either breakfast or brunch.

Bananas are rich in fiber, antioxidants and several nutrients that can help moderate blood sugar levels after meals and promote heart health. Bananas are high in several antioxidants, which may help reduce damage from free radicals and lower the risk of some diseases. Bananas are great for snacks, juicing, baking and cooking.It should be stored at room temperature. To slow down ripening (peel will turn black but the fruit inside will be fresh and ripe) keep in the refrigerator. Bananas can be frozen once the banana is peeled and stored in a freezer bag until ready to use (use a bit of fresh lemon juice to reduce browning).

 Ingredients




Medium sized semi-ripe bananas
Streaky bacon rashers





Wrap the banana with the bacon. You need 2 rashers per banana







Place the banana bacon rolls on a foil







Fold the foil over and place the tray in an oven at 200 Celsius for half an hour. Transfer the baked banana bacon roll onto a plate and serve hot.





Alternatively you can do this in a microwave oven.  



 Cover the prepared rolls with 2 layers of kitchen tissues to prevent the oil from the bacon splattering all over




Cook on high for about 4 minutes.
