This dish was introduced
to me by an elderly Malay man I met when I was buying okra in the market. I
have always cooked okra with sambal prawns, in curry or just plain so I thought
I will give it a try and it turned out really delicious especially with chilli
in it.
Ingredients
Small young okra (ladies
fingers)
Shallots
Asam pulp
Red chilli (optional)
Finely slice the shallots
and chilli
Take 1 tbsp asam pulp
Add 100 ml water and mix
well
Wash the okra and remove
the top and bottom ends
Heat up 1 tbsp oil and fry
the shallots until slightly brown
Add the tamarind water
Season with salt and ½ tsp
sugar
Put in the okra and chilli
and mix thoroughly
Add more water if it looks
too dry
Cover and simmer on low
fire until the okra is just soft
Give it another stir and
then dish up and serve immediately
