Steamed black bean chicken

This is the way pork ribs are cooked in dim sum restaurants. Today, I am using chicken instead of pork ribs for a change and it actually turned out quite tasty. However, I think the meat will be smoother if I add a little corn flour in the marinade. 

Ingredients


½ a chicken cut into bite size pieces




For the marinade:
2 wet sour plums
1 tbsp chopped garlic
2 red chilli padi (optional)
2 tbsp preserved black beans 


Wash and chop the black beans
Slice the chilli padi
Crush the sour plums
Put all the marinate ingredients onto the chicken and leave for 1 hour



Place the chicken into the steamer





Cover and steam for 30 minutes
Serve hot
