‘Recycled’ chicken meat

As usual nobody wants to eat the meat used to cook soup so instead of throwing it away I ‘recycle’ it by collecting the meat each time I cook soup and then stir fry it. The children loves it fried this way probably because they love anything that has dark soy sauce in it. Alternatively, you can use the meat to fry rice or noodles. 



 This is one of the soups that I use chicken carcass to cook the stock





When the soup is cooked take the chicken carcass out and let it cool down




Remove the chicken meat from the bones





Put the meat into a bag and keep in the freezer for future use




Ingredients 

Chicken meat from 3 carcasses
1 medium size onion
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp sugar



Slice the onions





Heat up some oil in a wok and fry the onion





Add the chicken meat when the onion is slightly translucent and mix well




Add the dark soy sauce, oyster sauce, sugar and a dash of sesame oil
Add a little hot water to prevent the meat burning



Season with salt and pepper
I am throwing in some leftover tau yew bah as well




Dish up and serve
